Ingredients:

50g dried rice noodles
1 tablespoon vegetable oil
1 clove garlic, minced
1 teaspoon grated ginger
1/2 cup chicken broth or stock
2 tablespoons fish sauce
2 tablespoons soy sauce
1/4 teaspoon sugar
2 tablespoons chopped fresh cilantro leaves for garnish (optional)

Cooking Instructions:

Soak the dried rice noodles in hot water for 10 minutes until softened. Drain and set aside.
Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant.
Add the chicken broth or stock, fish sauce, soy sauce and sugar to the pot and bring to a boil. Reduce heat to low and simmer for 5 minutes.
Add the softened noodles to the pot and cook for an additional 5 minutes until heated through.
