Ingredients:

2 sheets of spring roll wrappers
2 tablespoons vegetable oil
1/2 cup shredded cabbage
1/4 cup shredded carrots
1/4 cup chopped mushrooms
2 tablespoons chopped green onions
2 tablespoons chopped cilantro leaves
1 teaspoon minced garlic

Cooking Instructions:

Heat the vegetable oil in a pan over medium heat.
Add the cabbage, carrots, mushrooms, green onions, cilantro and garlic to the pan and cook for 5 minutes until vegetables are softened.
Remove from heat and let cool for 5 minutes.
Place one sheet of spring roll wrapper on a flat surface and spoon about 2 tablespoons of the vegetable mixture onto it. Roll up tightly into a cylinder shape and seal with water or egg wash if desired. Repeat with remaining wrapper and filling.
Heat remaining oil in a large skillet over medium-high heat and add the spring rolls to the pan. Fry for 3-4 minutes until golden brown on all sides, flipping occasionally to ensure even cooking.
Remove from heat and let cool for 5 minutes before serving warm or at room temperature with your favorite dipping sauce or condiment. Enjoy!
