Vietnamese Style Canh Chua (Sour Soup)

This easy-to-follow recipe will help you make an authentic Vietnamese-style Canh Chua (Sour Soup). Ingredients:

2 tablespoons of vegetable oil
1 small onion, diced
2 cloves of garlic, minced
1 teaspoon of fresh ginger, grated
1 tablespoon of tomato paste
2 cups of vegetable broth or water
1 cup of pineapple chunks, drained and rinsed
½ cup of okra, sliced into rounds
½ cup of cherry tomatoes, halved
¼ cup of tamarind paste or juice
2 tablespoons of fish sauce
2 tablespoons of sugar
Salt and pepper to taste

Cooking Instructions:

Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened. Add the ginger and tomato paste and cook for another minute.
Pour in the vegetable broth or water and bring to a boil. Reduce heat to low and add the pineapple chunks, okra, cherry tomatoes, tamarind paste or juice, fish sauce, sugar, salt and pepper. Simmer for 10 minutes until vegetables are tender.
Taste the soup for seasoning and adjust if necessary. Serve hot with steamed rice or noodles if desired.
