Ingredients:

120g pork loin or shoulder, thinly sliced
50g dried rice vermicelli noodles
2 tablespoons vegetable oil
1 teaspoon garlic powder
1 teaspoon ground black pepper
2 tablespoons fish sauce
2 tablespoons soy sauce
1 tablespoon sugar
2 tablespoons lime juice
1/2 cup bean sprouts
1/4 cup chopped fresh mint leaves

Cooking Instructions:

Preheat a grill or grill pan to medium-high heat.
In a bowl, combine the pork slices with the garlic powder, black pepper, fish sauce, soy sauce and sugar. Mix until the pork is evenly coated.
Grill the pork for about 5 minutes per side or until cooked through. Set aside to cool slightly before slicing into thin strips.
Meanwhile, cook the noodles according to package instructions and drain well.
In a large bowl, combine the cooked noodles with the vegetable oil and lime juice and mix until evenly coated. Add in the bean sprouts and mint leaves and mix until combined.
To assemble your Bun Thit Nuong (Grilled Pork with Noodles), divide the noodle mixture between two bowls and top each bowl with half of the grilled pork strips. Serve immediately while still warm!
