Ingredients:

1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon grated ginger root
1/2 teaspoon chili powder
2 cups chicken broth
1/2 cup water
2 tablespoons fish sauce
2 tablespoons lime juice
1/4 teaspoon sugar
1/4 teaspoon ground black pepper
4 ounces cooked chicken, shredded
4 ounces dried rice noodles

Cooking Instructions:

Heat the oil in a large pot over medium heat. Add the garlic and ginger and cook for about one minute until fragrant.
Add the chili powder and stir to combine. Pour in the chicken broth, water, fish sauce, lime juice, sugar and pepper. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the cooked chicken and noodles to the pot and cook for an additional 10 minutes until noodles are tender. Serve hot with desired toppings such as fresh herbs or bean sprouts.
