Ingredients:

1 sheet of rice paper
1/2 cup shredded lettuce
1/4 cup julienned carrots
1/4 cup julienned cucumber
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro leaves
2 tablespoons chopped roasted peanuts or cashews (optional)

Cooking Instructions:

Soak the rice paper in warm water for about 10 seconds until it is soft and pliable.
Place the softened rice paper on a plate or cutting board.
Arrange the lettuce, carrots, cucumber, mint leaves, cilantro leaves and peanuts or cashews (if using) on top of the rice paper.
Roll up the rice paper tightly to form a log shape.
Slice into bite-sized pieces and serve immediately.
