Ingredients:

2 slices of French baguette or other bread of your choice
2 eggs
2 tablespoons vegetable oil
1 tablespoon butter or margarine
2 tablespoons mayonnaise or aioli sauce
1/4 cup shredded carrots
1/4 cup chopped cucumber slices
1/4 cup chopped cilantro leaves
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F (175°C). Place the bread slices on a baking sheet and bake for 5 minutes until lightly toasted. Set aside.
Heat the vegetable oil in a skillet over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook for 3-4 minutes until the whites are set but the yolks are still runny. Remove from heat and set aside.
Spread butter or margarine on one side of each slice of toast. Spread mayonnaise or aioli sauce on the other side of each slice of toast.
Place one egg on each slice of toast and top with shredded carrots, cucumber slices, and cilantro leaves. Serve immediately.
