Vietnamese Style Banh Cuon Ga (Chicken Steamed Rice Rolls)

Ingredients:

200g cooked chicken, shredded
2 tablespoons fish sauce
1 teaspoon sugar
1 teaspoon ground black pepper
2 tablespoons vegetable oil
1 cup cooked white rice
2 tablespoons chopped scallions or chives
4 sheets of banh cuon wrappers (rice paper)

Cooking Instructions:

In a medium bowl, combine the chicken, fish sauce, sugar and pepper. Mix until all ingredients are well combined.
Heat the oil in a large skillet over medium heat. Add the chicken mixture and cook for 5 minutes or until the chicken is cooked through.
Add the cooked white rice to the skillet and mix until all ingredients are well combined. Cook for an additional 5 minutes or until heated through.
Remove from heat and let cool for 5 minutes before assembling the rolls.
To assemble the rolls, place one sheet of banh cuon wrapper on a flat surface and spread about ¼ cup of the filling in an even layer on one side of the wrapper leaving about ½ inch border around all sides. Sprinkle some chopped scallions or chives over top of filling if desired.
Fold over one side of wrapper to cover filling then fold in both sides to form a roll shape similar to an egg roll shape but slightly thinner than an egg roll shape (see photo). Secure edges by pressing down lightly with your fingers or use a little water to help seal edges together if needed (see photo). Repeat with remaining wrappers and filling until all rolls are assembled.
Place assembled rolls onto a steamer basket lined with parchment paper or lettuce leaves (this will help prevent sticking). Steam for 10-15 minutes or until wrappers are translucent and slightly sticky when touched lightly with your finger (see photo). Serve warm with dipping sauce if desired such as hoisin sauce or sweet chili sauce for dipping! Enjoy!
