Ingredients:

1 large sweet potato, peeled and diced into small cubes
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the sweet potato cubes and cook for another 3 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the sweet potatoes are tender.
Using an immersion blender or regular blender, blend the soup until smooth.
Stir in the cumin, smoked paprika, salt and pepper to taste. Simmer for another 5 minutes or until heated through.
