Ingredients:

200g vegan shrimp
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme leaves
2 cups vegetable broth
1 cup coconut milk
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the vegan shrimp, smoked paprika, and thyme leaves to the pot and cook for another 3 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the coconut milk to the pot and stir until combined. Simmer for another 5 minutes or until heated through.
