Ingredients:

1 teaspoon sesame oil
1 clove garlic, minced
2 tablespoons grated ginger root
2 cups vegetable broth
2 tablespoons soy sauce or tamari sauce
1 tablespoon rice vinegar or apple cider vinegar
2 tablespoons miso paste (optional)
4 ounces ramen noodles (or other noodles of choice)
1 cup sliced mushrooms (shiitake or button mushrooms work well)
1 cup sliced carrots
½ cup frozen peas

Cooking Instructions:

Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger and cook for about one minute until fragrant.
Add the vegetable broth, soy sauce or tamari sauce, rice vinegar or apple cider vinegar, and miso paste (if using). Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the ramen noodles to the pot and cook for 5 minutes until tender.
Add the mushrooms, carrots, and peas to the pot and cook for an additional 5 minutes until vegetables are tender.
Serve hot with your favorite toppings such as green onions, sesame seeds, nori strips, etc. Enjoy!
