Ingredients:

1/2 cup cooked lentils
1/4 cup diced onion
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 350°F.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the cooked lentils to the skillet and stir to combine with the onions. Cook for an additional 5 minutes.
Add the cumin, coriander, salt and pepper to the skillet and stir to combine all ingredients together. Cook for an additional 2 minutes.
Grease an oven-safe baking dish with cooking spray or oil and pour in the lentil mixture from the skillet into it. Spread out evenly in the dish.
Bake in preheated oven for 20 minutes or until golden brown on top.
