Ingredients:

2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 cups cooked chickpeas (or one 15
ounce can) drained and rinsed
2 cups vegetable broth or water
1/2 cup chopped fresh parsley
1/4 cup chopped fresh dill
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the turmeric, cumin, and coriander to the pan and cook for another minute or two until fragrant.
Add the chickpeas to the pan along with the vegetable broth or water. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the parsley and dill to the pan and simmer for another 5 minutes until heated through. Season with salt and pepper to taste.
Serve hot over cooked rice or quinoa if desired. Enjoy!
