Ingredients:

2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
Salt and pepper to taste
250 grams okra, sliced into thin rounds
2 tablespoons chopped fresh parsley

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the turmeric, cumin, coriander, salt and pepper to the skillet and stir to combine. Cook for another minute or two until fragrant.
Add the okra to the skillet and stir to combine with the spices. Cook for about 10 minutes until the okra is tender but still has some crunch.
Add the parsley to the skillet and stir to combine. Cook for another minute or two until fragrant.
Serve hot as a side dish or as part of a main meal with rice or flatbreads. Enjoy!
