Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground black pepper
¼ teaspoon ground cardamom
¼ teaspoon ground cinnamon
2 cups vegetable broth or water
1 cup cooked kidney beans or one 15
ounce can drained and rinsed kidney beans
2 cups fresh parsley leaves, chopped
2 cups fresh cilantro leaves, chopped
2 cups fresh fenugreek leaves or spinach leaves, chopped
Juice of one lemon
Salt to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened and lightly browned.
Add the turmeric, cumin, coriander, black pepper, cardamom and cinnamon to the pot and stir to combine. Cook for another minute until fragrant.
Pour in the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the cooked kidney beans to the pot along with the parsley, cilantro and fenugreek or spinach leaves. Simmer for another 25-30 minutes until all of the vegetables are tender.
Remove from heat and stir in lemon juice and salt to taste before serving hot with rice or flatbreads if desired.
