Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric powder
¼ teaspoon cayenne pepper (optional)
200 grams cooked green or brown lentils
400 ml vegetable stock
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric and cayenne pepper (if using) and cook for another minute until fragrant.
Add the cooked lentils and vegetable stock to the pan and bring to a boil. Reduce heat to low and simmer for 15-20 minutes until the liquid has reduced slightly. Season with salt and pepper to taste.
Serve hot with your favorite accompaniments such as rice or flatbreads. Enjoy!
