Vegan Persian Style Gheymé Cholé

This vegan version of traditional Persian stewed chickpeas dish is a delicious meal that can be prepared in under an hour using simple ingredients such as dried chickpeas, olive oil, onion, garlic, spices like cumin, coriander, turmeric powder & chili powder (optional), vegetable broth/water & salt & pepper for seasoning! Ingredients:

1 cup dried chickpeas (soaked overnight)
2 tablespoons olive oil
1 onion (diced)
2 cloves garlic (minced)
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric powder
½ teaspoon chili powder (optional)
2 cups vegetable broth or water
Salt and pepper to taste

Cooking Instructions:

Drain and rinse the soaked chickpeas and set aside.
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
Add the cumin, coriander, turmeric powder, chili powder (if using), and salt and pepper to taste to the pot and stir to combine all ingredients together. Cook for another minute until fragrant.
Add the drained chickpeas to the pot along with the vegetable broth or water and stir to combine all ingredients together again. Bring to a boil then reduce heat to low-medium heat and simmer for 40-45 minutes until chickpeas are tender but not mushy. Stir occasionally while cooking so that it doesn’t stick to the bottom of the pot or burn.
Once cooked, turn off heat and serve warm with your favorite sides such as rice or flatbreads! Enjoy!
