Ingredients:

1 cup basmati rice
2 tablespoons olive oil
1/2 teaspoon turmeric powder
1/2 teaspoon ground black pepper
1/4 teaspoon ground cumin powder
2 cloves garlic, minced
2 tablespoons dried fava beans (broad beans)
2 tablespoons fresh dill, chopped
1/4 cup plain yogurt

Cooking Instructions:

Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
Heat the olive oil in a medium saucepan over medium heat. Add the turmeric powder, black pepper, and cumin powder and stir to combine. Add the garlic and sauté for 30 seconds until fragrant.
Add the drained basmati rice to the saucepan and stir to combine with the spices and garlic. Cook for 3-4 minutes until lightly toasted.
Add 2 cups of water to the saucepan and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 15 minutes or until all of the liquid has been absorbed by the rice.
Once cooked through, add in the fava beans and dill and stir to combine with the rice mixture. Cover with a lid again and cook for an additional 5 minutes or until all of the liquid has been absorbed by the rice again.
Remove from heat and let sit covered for 5 minutes before serving with plain yogurt on top as desired! Enjoy!
