Ingredients:

2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground black pepper
¼ teaspoon ground cardamom
1 cup cooked chickpeas or white beans
2 cups vegetable broth or water
2 tablespoons tomato paste
½ cup chopped fresh parsley
½ cup chopped fresh cilantro
¼ cup chopped fresh dill
¼ cup chopped fresh mint leaves
2 ounces dried reshteh noodles or other thin eggless noodles
Salt to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the turmeric, cumin, coriander, black pepper and cardamom to the pot and stir to combine. Cook for another minute until fragrant.
Add the chickpeas or white beans to the pot along with the vegetable broth or water and tomato paste. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the parsley, cilantro, dill and mint leaves to the pot and stir to combine. Simmer for another 5 minutes until herbs are wilted.
Add the noodles to the pot and cook for 8-10 minutes until noodles are tender but still firm. Season with salt to taste if desired.
Serve hot with extra herbs as garnish if desired!
