Ingredients:

1 cup yellow lentils
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon turmeric powder
½ teaspoon paprika powder
2 cups vegetable broth or water
Salt and pepper to taste

Cooking Instructions:

Rinse the lentils in cold water and set aside.
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Add the cumin, coriander, turmeric and paprika to the pot and stir to combine. Cook for another minute or two until fragrant.
Add the lentils to the pot along with the vegetable broth or water. Bring to a boil then reduce heat to low and simmer for 20 minutes or until lentils are tender. Season with salt and pepper to taste.
Serve hot with your favorite accompaniments such as rice or flatbreads! Enjoy!
