Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon smoked paprika
2 cups vegetable broth
1 cup coconut milk
2 tablespoons nutritional yeast flakes
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the thyme and smoked paprika and cook for another minute.
Pour in the vegetable broth and coconut milk and bring to a boil. Reduce heat to low and simmer for 15 minutes.
Add the nutritional yeast flakes, salt, and pepper to taste. Simmer for another 10 minutes or until desired thickness is reached.
Serve hot with crusty bread or crackers on the side. Enjoy!
