Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
250g mushrooms (button or chestnut), sliced
2 tablespoons all
purpose flour
500ml vegetable stock
2 tablespoons dry sherry
1 teaspoon dried thyme
Salt and pepper to taste
100ml plant based cream (e.g. oat cream)

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened (about 5 minutes).
Add the mushrooms to the pan and cook for another 5 minutes until they are softened.
Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute before adding the vegetable stock, sherry, thyme, salt and pepper. Bring to a simmer then reduce heat to low and cook for 10 minutes until thickened slightly.
Remove from heat then stir in the plant based cream until combined. Serve hot with crusty bread or croutons if desired. Enjoy!
