Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 celery stalks, diced
1 teaspoon dried thyme leaves
1/2 teaspoon sea salt
1/4 teaspoon black pepper
4 cups vegetable broth or stock
1/2 cup coconut milk or cream

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the celery, thyme, salt and pepper and cook for another 3 minutes.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Remove from heat and stir in the coconut milk or cream until combined. Use an immersion blender to blend the soup until smooth. Alternatively you can transfer it to a blender or food processor to blend it until smooth before returning it to the pot.
Taste and adjust seasoning if needed before serving hot with your favorite toppings such as croutons or fresh herbs. Enjoy!
