Ingredients:

2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme leaves
2 cups vegetable broth or stock
2 cups fresh or frozen corn kernels (thawed if frozen)
1/2 cup coconut milk or cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the smoked paprika and thyme leaves and cook for another minute.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the corn kernels and coconut milk or cream and simmer for another 10 minutes until the corn is tender.
Season with salt and pepper to taste before serving.
