Ingredients:

100g plain flour
1 teaspoon baking powder
1/4 teaspoon salt
75g butter, softened
50g granulated sugar substitute (e.g. Splenda)
1 large egg
1 teaspoon vanilla extract
100g boysenberries, fresh or frozen and thawed

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large bowl using an electric mixer, beat together the butter and sugar substitute until light and fluffy. Beat in the egg and vanilla extract until combined. Gradually add in the dry ingredients until just combined. Fold in the boysenberries until evenly distributed throughout the dough.
Drop tablespoonfuls of dough onto prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges and set in the center. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
