Ingredients:

120g uncooked white rice
60g raw shrimp, peeled and deveined
30g snow peas, trimmed and halved lengthwise
30g mushrooms, sliced thinly
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon freshly grated ginger
2 tablespoons soy sauce

Cooking Instructions:

Cook the rice according to package instructions. Once cooked, set aside.
Heat the oil in a large skillet over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant.
Add the shrimp and cook for 3 minutes until pink and cooked through.
Add the snow peas and mushrooms to the skillet and cook for an additional 3 minutes until vegetables are tender-crisp.
