Ingredients:

2 soft taco shells
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon cumin powder
Salt and pepper to taste
2 tablespoons tomato paste
2 tablespoons water
4 ounces ground beef or turkey

Cooking Instructions:

Preheat your sous vide water bath to 140°F (60°C).
Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the chili powder, garlic powder, cumin, salt and pepper and cook for another minute. Stir in the tomato paste and water and cook for another minute. Remove from heat and set aside.
Place the ground beef or turkey in a vacuum sealed bag with the cooked vegetables. Seal the bag using a vacuum sealer or by using the water displacement method (place bag in a bowl of water with one corner sticking out of the water). Place the sealed bag into your preheated sous vide bath for one hour.
After one hour, remove from sous vide bath and open bag carefully (steam will be hot). Heat up two soft taco shells in a skillet over medium heat until lightly browned on both sides, about 3 minutes per side. Fill each taco shell with some of the cooked beef or turkey mixture and serve immediately with your favorite toppings such as cheese, lettuce, tomatoes, sour cream etc… Enjoy!
