Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
2 celery stalks, diced
2 tablespoons tomato paste
1 teaspoon smoked paprika
½ teaspoon cayenne pepper (optional)
½ teaspoon dried thyme leaves
½ teaspoon dried oregano leaves
¼ teaspoon ground black pepper
2 cups chicken broth or stock
1 cup long grain white rice
500g peeled and deveined shrimp

Cooking Instructions:

Preheat your sous vide water bath to 140°F (60°C).
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the bell pepper and celery and cook for an additional 3 minutes.
Stir in the tomato paste, smoked paprika, cayenne pepper (if using), thyme leaves, oregano leaves and black pepper. Cook for an additional minute until fragrant.
Pour in the chicken broth or stock and bring to a boil. Add the rice and stir to combine. Reduce heat to low and simmer for 20 minutes or until the rice is cooked through.
Meanwhile, place the shrimp in a sous vide bag or container with a lid and seal it tightly using either vacuum sealing or zip-top bags with all of the air removed from them before sealing them shut completely. Place the sealed bag into your preheated water bath for 10 minutes or until cooked through (the internal temperature should reach 145°F/63°C).
Once cooked through remove from heat immediately and add to your gumbo pot along with any juices that may have accumulated in the bag during cooking process stirring to combine everything together well before serving hot over cooked white rice if desired! Enjoy!
