Ingredients:

2 large flour tortillas
1/2 cup shredded cheese of your choice (cheddar, Monterey Jack, etc.)
2 tablespoons diced onion
2 tablespoons diced bell pepper (any color)
2 tablespoons diced jalapeno pepper (optional)
1 tablespoon olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 183°F (83°C).
Place the tortillas on a plate and top with the cheese, onion, bell pepper, jalapeno pepper (if using), olive oil, salt and pepper.
Place the plate in a vacuum seal bag and seal it using the water displacement method.
Place the sealed bag in the preheated water bath and cook for 50 minutes.
Remove the bag from the water bath and carefully open it. The quesadilla should be hot and melted together.
Carefully remove the quesadilla from the bag and place it on a cutting board or plate. Cut into wedges and serve immediately with your favorite toppings or sauces!
