Ingredients:

2 cups of diced vegetables (carrots, celery, peppers)
2 tablespoons of olive oil
1 teaspoon of sea salt
1 teaspoon of black pepper
2 tablespoons of white vinegar or apple cider vinegar

Cooking Instructions:

Preheat your sous vide machine to 85°C/185°F.
Place the diced vegetables in a vacuum-sealed bag with the olive oil, sea salt and black pepper. Seal the bag using the water displacement method.
Place the sealed bag into the preheated sous vide machine and cook for 1 hour.
Remove the bag from the sous vide machine and add the vinegar to it. Seal it again using the water displacement method and let it sit for 10 minutes before serving.
