Ingredients:

2 cups of diced vegetables (e.g. bell peppers, zucchini, eggplant)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 185°F (85°C).
Place the diced vegetables in a vacuum sealed bag and add the olive oil, balsamic vinegar, oregano, salt and pepper. Seal the bag and mix everything together until all the vegetables are evenly coated.
Place the bag in the preheated water bath and cook for 1 hour.
Remove from the water bath and serve warm or cold with your favorite side dish.
