Spread butter on one side of each slice of bread. Place one slice of cheese on each slice of bread and season with salt and pepper to taste. Top with the other slice of bread so that the buttered sides are facing outwards.
Place the sandwich in a sous vide bag and seal it using the water displacement method or a vacuum sealer.
Place the bag in the preheated water bath and cook for 1 hour.
Remove the bag from the water bath and open it carefully to avoid any hot steam burns.
Heat a skillet over medium-high heat and place the sandwich in it for 1-2 minutes per side until golden brown and crispy on both sides. Serve immediately while still hot!
