Ingredients:

2 large tortillas
1/2 cup of cooked chicken, shredded or diced
1/4 cup of black beans, drained and rinsed
1/4 cup of corn kernels, drained and rinsed
1/4 cup of enchilada sauce
1/4 cup of shredded cheese (cheddar or Monterey Jack)
2 tablespoons of chopped fresh cilantro
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 180°F (82°C).
Place the tortillas in a single layer in a vacuum sealed bag. Seal the bag using the water displacement method. Place the bag in the preheated water bath and cook for 30 minutes.
In a medium bowl combine the chicken, black beans, corn kernels, enchilada sauce, cheese and cilantro. Season with salt and pepper to taste.
Remove the tortillas from the water bath and carefully open the bag. Place one tortilla on a plate or cutting board and spread half of the filling over it evenly. Top with the second tortilla and press down lightly to seal it shut.
Place the filled enchilada back into a vacuum sealed bag and seal using the water displacement method again. Place back into the preheated water bath for an additional 90 minutes to cook through completely.
Remove from heat and carefully open bag again before serving warm with your favorite toppings such as sour cream or guacamole! Enjoy!
