Ingredients:

2 tablespoons olive oil
1/2 cup diced onion
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons tomato paste
1/2 cup vegetable broth
2 tablespoons white wine vinegar

Cooking Instructions:

Preheat your sous vide water bath to 180°F (82°C).
Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano, black pepper, salt, tomato paste, vegetable broth and white wine vinegar to the skillet and stir to combine. Simmer for 5 minutes until the mixture has thickened slightly.
Transfer the mixture to a heat-safe container that can fit into your sous vide water bath. Seal the container using vacuum sealer or zip-top bags and submerge in the preheated water bath for 1 hour.
Remove from the water bath and let cool slightly before serving as a dip with chips or vegetables of your choice. Enjoy!
