Ingredients:

2 boneless skinless chicken thighs
1 cup egg noodles
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
2 cloves garlic, minced
2 cups chicken broth or stock
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 150°F (65°C).
Place the chicken thighs in a vacuum-sealed bag with the olive oil, salt, and pepper. Seal the bag using the water displacement method.
Place the sealed bag in the preheated water bath and cook for 45 minutes.
Meanwhile, prepare the vegetables by dicing the carrots, celery, onion, and garlic. Set aside until ready to use.
After 45 minutes of cooking time has elapsed, remove the bag from the water bath and set aside to rest for 5 minutes before opening it up.
Heat a large pot over medium heat and add the vegetables along with a pinch of salt and pepper. Cook for 5-7 minutes until softened.
Add the chicken broth or stock to the pot along with the egg noodles and stir to combine everything together. Bring to a boil then reduce heat to low and simmer for 15-20 minutes until noodles are cooked through.
Once noodles are cooked through, add in the cooked chicken thighs from earlier and stir everything together until heated through (about 3-5 minutes). Taste for seasoning adjustments if needed then serve hot!
