Ingredients:

60g smoked ham, diced
1/2 cup split peas, rinsed and drained
1/2 cup carrots, diced
1/4 cup onion, diced
2 cloves garlic, minced
2 cups chicken broth or stock
1/4 teaspoon dried thyme leaves
Salt and pepper to taste

Cooking Instructions:

Preheat your smoker to 225°F.
Place the diced ham in a large bowl and set aside.
In a separate bowl, combine the split peas, carrots, onion, garlic, chicken broth or stock and thyme leaves. Mix until everything is evenly combined.
Pour the mixture into a large foil pan or baking dish and place it in the smoker.
Smoke for 45 minutes to an hour or until the split peas are tender and cooked through.
Once cooked through, remove from the smoker and season with salt and pepper to taste before serving hot with the diced ham on top as garnish.
