Ingredients:

1 pork tenderloin (about 500g)
2 tablespoons olive oil
2 tablespoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste For the Maple Glaze:
¼ cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar

Cooking Instructions:

Preheat your smoker to 225°F.
Rub the pork tenderloin with olive oil, smoked paprika, garlic powder, onion powder, salt and pepper.
Place the pork in the smoker and cook for 1 hour and 15 minutes or until an internal temperature of 145°F is reached.
Meanwhile, make the maple glaze by combining the maple syrup, Dijon mustard and apple cider vinegar in a small saucepan over medium heat. Simmer for 5 minutes or until thickened slightly.
Once the pork has reached an internal temperature of 145°F, brush it generously with the maple glaze and cook for an additional 15 minutes or until an internal temperature of 155°F is reached.
