Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 cups vegetable broth
1 can (14.5 ounces) diced tomatoes with juice
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/4 teaspoon red pepper flakes
2 cups cooked small pasta shells or other small pasta shape
2 cups fresh spinach leaves

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrot and celery and cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and add the tomatoes with juice, oregano, basil, red pepper flakes, and cooked pasta shells or other small pasta shape. Simmer for 20 minutes or until vegetables are tender.
Add the spinach leaves to the soup and simmer for another 5 minutes or until spinach is wilted. Serve hot with crusty bread if desired.
