Ingredients:

4 smoked meatballs
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
1 cup tomato sauce
2 tablespoons tomato paste
Salt and pepper to taste
4 slices mozzarella cheese
4 sub rolls or hoagie buns

Cooking Instructions:

Preheat your smoker to 225°F. Place the meatballs on the smoker grate and smoke for 20-30 minutes until cooked through. Remove from the smoker and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the oregano, basil, red pepper flakes (if using), tomato sauce, and tomato paste. Simmer for 10 minutes until thickened. Season with salt and pepper to taste.
To assemble the subs, place a slice of mozzarella cheese on each sub roll or hoagie bun. Top with two smoked meatballs per sandwich then spoon some of the tomato sauce over top. Serve immediately.
