Ingredients:

2 tablespoons vegetable oil
1/2 onion, diced
2 cloves garlic, minced
1/2 teaspoon ginger powder
1/2 teaspoon red pepper flakes (optional)
1/4 cup soy sauce
2 tablespoons rice vinegar or white vinegar
2 tablespoons sugar
200g dried egg noodles

Cooking Instructions:

Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger powder and red pepper flakes (if using) and cook for another minute.
Add the soy sauce, vinegar, and sugar to the skillet and stir to combine. Bring to a simmer and let cook for 3-4 minutes until slightly thickened.
Meanwhile, bring a pot of water to a boil over high heat. Once boiling add the noodles and cook according to package instructions until al dente (about 5-7 minutes). Drain the noodles in a colander when done cooking.
Add the cooked noodles to the skillet with the sauce mixture and toss to combine everything together until all of the noodles are evenly coated with sauce. Cook for another minute or two until everything is heated through then remove from heat. Serve immediately!
