Ingredients:

500g venison, cubed
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
250ml beef stock
250ml red wine
2 tablespoons tomato paste
1 teaspoon dried thyme leaves
1 bay leaf

Cooking Instructions:

Heat the olive oil in a large pot over medium-high heat. Add the cubed venison and cook until browned on all sides. Remove from the pot and set aside.
Add the onion to the pot and cook until softened. Add the garlic and cook for another minute.
Add the carrots and celery to the pot and cook for another 5 minutes or until softened.
Return the venison to the pot along with the beef stock, red wine, tomato paste, thyme leaves and bay leaf. Bring to a boil then reduce heat to low and simmer for 1 hour or until venison is tender.
Serve hot with mashed potatoes or crusty bread for a hearty winter meal!
