Ingredients:

2 tablespoons of butter
1 onion, finely chopped
2 cloves of garlic, minced
2 tablespoons of all
purpose flour
500ml of fish stock or vegetable stock
200g of smoked salmon, cut into small cubes
200g of scallops, cut into small cubes
2 tablespoons of chopped fresh parsley

Cooking Instructions:

Heat the butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened (about 5 minutes).
Add the flour and stir to combine. Cook for 1 minute then gradually add the stock while stirring continuously until combined. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the smoked salmon and scallops to the soup and simmer for another 10 minutes or until the seafood is cooked through.
Stir in the parsley then season with salt and pepper to taste before serving hot.
