Ingredients:

1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 teaspoon of smoked paprika
1 teaspoon of dried thyme leaves
500ml of vegetable stock or water
200g of potatoes, peeled and diced into small cubes
100g of cooked shrimp, peeled and deveined
100ml of double cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the smoked paprika and thyme leaves and cook for another minute.
Pour in the vegetable stock or water and bring to a boil. Add the potatoes and reduce the heat to low. Simmer for 10 minutes or until the potatoes are tender.
Add the cooked shrimp to the pan and stir in the double cream. Simmer for another 5 minutes or until heated through.
Season with salt and pepper to taste before serving hot.
