Ingredients:

1 cup cubed winter squash (such as butternut or acorn)
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley leaves
2 tablespoons crumbled feta cheese
2 tablespoons toasted pumpkin seeds

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place the cubed winter squash on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Toss to combine.
Roast in preheated oven for 25-30 minutes, stirring once halfway through cooking time, until squash is tender and lightly browned.
