Ingredients:

1 sweet potato, peeled and cubed
1/2 cup cooked black beans
1/2 cup cooked quinoa
1 red pepper, diced
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons lime juice
2 tablespoons chopped cilantro

Cooking Instructions:

Preheat oven to 400°F.
