Ingredients:

1 medium sweet potato, peeled and cubed
1 cup black rice, cooked according to package instructions
2 tablespoons olive oil
1 teaspoon sea salt
2 tablespoons white miso paste
2 tablespoons freshly grated ginger root
2 tablespoons rice vinegar
1 tablespoon honey

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place the cubed sweet potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with sea salt. Roast for 25 minutes or until golden brown and tender.
In a small bowl, whisk together the miso paste, grated ginger root, rice vinegar and honey until combined. Set aside.
In a large bowl combine the cooked black rice and roasted sweet potatoes. Pour the dressing over the top and toss to combine. Serve warm or cold.
