Ingredients:

1/2 cup cubed pumpkin
1 tablespoon olive oil
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
Salt and pepper to taste
2 cups mixed greens of your choice
2 tablespoons crumbled feta cheese

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place the cubed pumpkin on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with garlic powder, oregano leaves, salt and pepper. Toss to coat evenly.
Roast in preheated oven for 20 minutes or until golden brown and tender.
In a large bowl combine the roasted pumpkin with the mixed greens of your choice. Sprinkle with feta cheese and toss to combine. Serve immediately.
