Ingredients:

1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked quinoa
1 roasted red pepper, diced For the Lemon Vinaigrette:
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon honey
1/2 teaspoon Dijon mustard

Cooking Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cauliflower florets on the baking sheet and drizzle with olive oil. Sprinkle with garlic powder, salt and pepper. Toss to coat evenly.
Bake for 20 minutes or until golden brown and tender.
Meanwhile, cook the quinoa according to package instructions. Once cooked, set aside to cool slightly.
In a small bowl whisk together all of the ingredients for the lemon vinaigrette until combined. Set aside until ready to use.
In a large bowl combine the cooked quinoa and roasted cauliflower florets with the diced roasted red pepper and pour over the lemon vinaigrette dressing. Toss to combine everything together evenly then serve immediately or store in an airtight container in the refrigerator for up to 3 days.
