Ingredients:

1 head of cauliflower, cut into florets
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked quinoa
1 cup cooked green beans, cut into 1 inch pieces
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cauliflower florets on the baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Toss to coat evenly. Roast in preheated oven for 20 minutes or until golden brown and tender.
In a large bowl, combine the cooked quinoa, green beans, roasted cauliflower florets, lemon juice, extra virgin olive oil and honey. Season with salt and pepper to taste. Toss to combine all ingredients evenly.
