Ingredients:

1 head of cauliflower, cut into florets
1 can of chickpeas, drained and rinsed
1 red pepper, diced
1 cup of quinoa, cooked
2 tablespoons of olive oil
2 cloves of garlic, minced
Juice of 1 lemon
